The hotel and restaurant would not be what it is without the staff behind the scenes and front of house. We’d like to take this opportunity to introduce you to a member of staff each month. This month we’d like you to meet the backbone of the kitchen Ian Grant, Head Chef.
Ian Grant – Head Chef
Ian comes from Suffolk and has worked in various prestigious establishments ranging from The Park Lane Hotel, London to the White Lion Hotel, Oldborough. He loves simple food, using the right ingredients in season and says his favourite dish is rare venison with pickled red cabbage, braised potatoes and bitter chocolate sauce, teamed with a glass of Rioja.
Enthusing that he is lucky to work in this part of the country as it has some of the best produce in Britain, Ian believes being part of a foodie destination rubs off positively on his staff as well as the establishments around us.
The most popular dish at the Alexandra is scallops with roasted cauliflower puree and truffle oil, which appears regularly on the daily changing dinner menu. Ian Grant is the backbone of the Alexandra who you rarely see as he’s to be found in the hub of his kitchen, cooking up stocks and devising new menus. Sometimes though, you might catch a glimpse of him picking edible flowers from our kitchen garden.
After retaining the Silver Taste of the West award in 2012 Ian’s aspiration is to go for gold this year. All the staff are behind him in this, so please come in to taste the delicious dishes served out of Ian’s kitchen.
